Smoky Black Bean Enchiladas: A Flavorful Vegetarian Dinner

If you are looking for a vegetarian meal that is filling, flavorful, and easy to prepare, Smoky Black Bean Enchiladas are a great option. This comforting dish combines soft corn tortillas, seasoned black beans, smoky chipotle, enchilada sauce, and melted cheese.

The beans provide plenty of texture and substance, while the smoky spices give the filling a deep and satisfying flavor. Even people who usually prefer meat-based meals may find these enchiladas surprisingly delicious.

Prepare the Black Bean Filling

The filling is the heart of this recipe. Start with cooked black beans and combine them with ingredients such as onion, garlic, spices, and chipotle peppers.

Chipotle gives the mixture its signature smoky flavor along with a gentle heat. You can adjust the amount depending on how spicy you want the enchiladas to be.

Add a little salt and other seasonings to bring all the flavors together. Mash some of the beans while leaving others whole. This creates a filling with a mixture of creamy and chunky textures.

You can also add corn, diced peppers, or chopped tomatoes for extra flavor and color.

Prepare the Tortillas

Corn tortillas are traditionally used for enchiladas. Before filling them, warm the tortillas briefly so they become soft and easier to roll.

Dip each tortilla quickly into enchilada sauce. This adds flavor and also helps keep the tortillas moist during baking.

Do not soak them for too long because overly soft tortillas can become difficult to handle.

Fill and Roll the Enchiladas

Place a portion of the black bean mixture in the center of each tortilla. Add some shredded cheese and carefully roll the tortilla around the filling.

Place the rolled enchiladas seam-side down in a baking dish. Continue until all the filling has been used.

It is completely normal for this part of the process to become a little messy. Some sauce may get on your hands or around the edges of the tortillas, but that is part of making homemade enchiladas.

Add Plenty of Sauce and Cheese

Once all the enchiladas are arranged in the baking dish, pour more enchilada sauce over the top.

Make sure most of the tortillas are covered with sauce so they stay soft while baking. Then sprinkle a generous layer of shredded cheese across the surface.

As the dish bakes, the cheese melts and develops a delicious golden layer.

Bake Until Hot and Bubbly

Place the baking dish in a preheated oven and bake until the enchiladas are heated through and the cheese is melted.

The edges may become slightly crispy while the center stays soft and flavorful.

Allow the enchiladas to rest for a few minutes after removing them from the oven. This makes them easier to serve without falling apart.

Easy Topping Ideas

You can customize your enchiladas with a variety of toppings. Fresh cilantro, sliced avocado, chopped green onions, or diced tomatoes can add freshness.

A spoonful of sour cream or Greek yogurt can also provide a cool contrast to the smoky and spicy filling.

For extra freshness, serve the enchiladas with a simple green salad or fresh salsa.
